- 4 russet potatoes (medium)
- 2 scallions
- 1 Tbsp. butter
- 2 Tbsp. sour cream (for potatoes)
- 4 strips bacon (cooked and crumbled)
- 2 oz. shredded cheddar cheese (2 oz. is about 1/2 cup)
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- sour cream (for serving)

Directions
- Preheat the oven to 400°F.
- Line a baking sheet with aluminum foil. Set aside.
- Pierce each potato 2-3 times with a fork and wrap each individually in a sheet of aluminum foil.

Very delicious- used smallish potatoes, but still worked. 5 potatoes probably enough next time

This was delicious! I added steamed broccoli to the potato mixture before I baked it.

Turned out great. Had to improvise a few ingredients but nonetheless we destroyed them

Turned out good. I don't individually wrap the potatoes though. That just seems like a waste of aluminum to me. I just coat them with olive oil and salt, and the skin turn out nice and crispy
