Easy and Delicious! Made about 4 bowls worth as stated. Next time I'll double the recipe because it's great heated up the next day as well.

My favorite baked potato soup so far! I did not slow cook this; I made the saute and roux in one pot and cooked the potatoes in a separate pot and then combined the two. I like this recipe because it is homemade, other recipes I have found call for a can of cream of potato, etc, what is the point of making soup if you are using cans of soup?! I will be making this again!
