- chicken stock (– we like to use a high quality chicken stock for the flavor, but vegetable stock can also be used for a vegetarian friendly alternative)
- sour cream (– this adds a nice and really subtle creamy, tangy flavor to the soup)
- salt
- pepper
- shredded cheddar cheese
- cooked bacon (crispy, crumbled)
- chives
- green onion

- 4 russet potatoes (about 1 1/2 pounds, scrubbed clean)
- 5 Tbsp. unsalted butter (cubed)
- 1 diced shallot (small)
- 1/4 cup all-purpose flour
- 3 cups milk
- 1 cup chicken stock (can use vegetable stock)
- 1/2 cup sour cream
- salt
- pepper
- 2 cups shredded cheddar cheese
- 4 strips cooked bacon (crispy, crumbled)
- 1 Tbsp. chives (sliced)
- 1/2 cup onions (crispy, or shallots, optional)

Thick, bland, and stodgy. I admit I "baked" the potatoes in my Instant Pot, but I've made good potato soup that way before. It wasn't poisonous, but it's not as good as dinner should be.

Great recipe! The basic soup part is really tasty, and then it's great to be able to customize with all the delicious baked potato toppings. Will make again.

I added corn and a 1/2 tsp. Cayenne and 2 cups milk and one cup heavy cream. My family loved this.

Great! I read the other reviews and did a few things different and it was delicious! I used leftover baked potatoes and left the skin on them and then added a bit of dry ranch dressing seasoning when I added the potatoes. Will definitely make again!!

We put a bit too much cheese in, but overall it was great and easy to make. Didnt have an immersion blender, so we used a normal one, and it turned out just fine.

Good overall! Easy to throw together. Didn’t have an emersion blender so couldn’t get the potatoes too small, but that’s okay because I like chunks. Added freshly cooked bacon for some extra flavor. Would definitely recommend adding extra seasonings, felt like it was missing something.

I used leftover baked potatoes. Worked great. I don’t like to skin my potatoes so next time will add less flour for the rue at the beginning since it was pretty thick with the extra starch from the skin. Thinned out with some extra milk and stock. Plus added a little ground sage for savory.

Due to being pressed for time, I boiled the potatoes rather than baking. The soup was a bit thick but the taste was very good with some salt and pepper. The entire family loved it!! Will definitely be making it again!

Very good! sautéed onions, celery and minced garlic. Used 2 cups half and half, one cup whipping cream. Next time, will use 3 cups half and half. Was a little too thick with the whipping cream. Also, did not blend as I wanted the texture.

This Potato Soup is one of the best I’ve ever eaten, and I’ve tasted a lot because we have a big family so we are always making soups for dinner.
I diced up the potatoes and cooked them in a pot on the stove only until they were barely soft so they didn’t go mushy, instead of barking them in the oven. l also did not blend it because I don’t really like smooth soups, weird as that may sound. I also used Heavy Whipping Cream because I did not have any milk, but it only made the soup creamer. But this is one meal my 6 brothers did not complain about. Those who cook for boys should know what a success it must be to satisfy 6 brothers! 😁

This turned out really good. I did put the bacon in the soup before I blended it to give it a little more flavor and it was really good. Even one of my picky eaters thought it was yummy

It tasted really good. I did add grated carrot and puréed only half the potatoes and kept the other half chunky. Needs
lots of salt I used 3 tsp.

I had no problems with this recipe. It was very easy to follow and it turned out great!

it was good, didn't make it a smooth soup though as I pike potato chunks.
Although the potatoes weren't done with the time it specified as the potatoes were different sizes. So some weren't quite done.

I had to improvise due to lacking ingredients but the recipe was really good. I recommend it

Turned out great and it was easy to make. i don't have a blender so i just spent a little more time mixing with a wisk.
