- 1 1/2 Tbsp. olive oil
- 1/2 butternut squash (large, peeled and spiralized)
- 3/4 cup coconut water (ZICO)
- 1 1/2 Tbsp. coconut flakes
- 1 1/2 Tbsp. chopped cilantro
- 8 medium shrimp (deshelled and deveined)
- 1/2 tsp. garlic powder
- 1 lime

Directions
- Place the butternut squash noodles (in batches) into a food processor and pulse until rice-like bits are made. Continue until all noodles are made into rice. Set aside.
- In a large skillet, pour in 1 tbsp of the olive oil. Once oil heats, add in the butternut squash bits and cook for 1 minute, stirring frequently.
- Then, pour in 1/2 cup of the ZICO coconut water. Stir the rice and let cook for about 5 minutes or until it reduces. Taste the rice - if it’s still crunchy, add in the other 1/4 cup of ZICO and let reduce.
