- 3 Tbsp. lime zest (+ more for garnishing)
- 1/3 cup lime juice
- 1/3 cup honey
- 2 Tbsp. olive oil
- 1 Tbsp. chicken
- 1/2 tsp. salt (or to taste)
- 1/2 tsp. pepper (or to taste)
- 1/4 tsp. cayenne pepper (optional and to taste)
- 1 1/4 lb. boneless skinless chicken breasts (diced into bite-sized pieces and seasoned with salt and pepper)
- 3 cups cooked rice (I used two 8.8-ounce pre-cooked Uncle Ben’s Original Rice packets)
- 15 oz. black beans (drained and rinsed)
- 1 cup corn (I used frozen that I added straight from freezer)
- 3/4 cup red bell pepper (seeded and diced small, orange or yellow peppers may be substituted)
- 3/4 cup cilantro leaves (chopped; or to taste)

Delicious!! Made in a cast iron pan for extra juicy chicken. I also used long grain brown rice in the instant pot to use.
