- 15 oz. lite coconut milk
- 1 dried Thai chili
- 1 tsp. coconut flakes (unsweetened)
- 1/4 tsp. cumin (whole)
- 1/4 tsp. coriander (whole)
- 4 black peppercorns
- 1 Tbsp. coconut oil
- 2 skinless boneless chicken breasts (cut into ½” x 1” chunks)
- braggs liquid aminos (Spray)
- 1 stalk celery (cut on the diagonal into ½” pieces)
- 4 cups fresh spinach (roughly chopped)
- 1/2 red onion (small, sliced into slivers, 1”4” x 1”)
- 2 cups fresh green beans (cut on the diagonal into 1” pieces)
- 1/4 cup fresh basil (chopped)
