- 5 Tbsp. virgin coconut oil (melted and cooled)
- nonfat plain greek yogurt (or low-fat)
- 1/4 cup water (cool)
- 1 tsp. granulated gelatin (unflavored)
- 1/4 tsp. cream of tartar (or 1 teaspoon light corn syrup)
- 16 oz. low-fat cream cheese (at room temperature)
- 1/8 tsp. kosher salt
- 3/4 cup confectioners sugar
- 1 1/2 tsp. pure vanilla extract
- 1 vanilla bean (optional)
