Perfect! I substitued potato starch for corn starch, and used 1 cup of 2% milk with 1 Tbsp white vinegar instead of buttermilk.
I have a Cuisinart classic round waffle maker. Single recipe allowed for 4 waffles (3 1/2 actually).
I love this recipe, HATE this waffle maker. (To this day I regret throwing out my Hamilton Beach 4 Square Nonstick Waffle Maker.)

At first I was concerned that this batter was too thin. The waffles turned out perfectly! They were crisp on the outside and soft on the inside. i will definitely use this recipe again!

It’s perfect! It turns out just like the title says “light and crispy” also it has a traditional Belgian waffle flavor.

I make these waffles about every other weekend! They're light, crispy, and full of flavor. Add some blueberries to the waffle iron and you've made a little bit of heaven on a plate!
