- 2 cups low-fat milk (*use Fairlife milk for an added protein boost)
- 3 oz. low fat cream cheese (softened)
- 1 tsp. coconut extract (or vanilla extract)
- 3/4 cup cool whip (fat-free, can also use light whipped topping or Truwhip)
- 1/2 cup shredded coconut (divided)
- 1 graham cracker crust (premade, can also use mini premade graham cracker crusts, shortbread pie crust, or chocolate pie crust here)
