Ingredients

- 1 1/4 tsp. active dry yeast
- 1/4 cup lukewarm water (between 90 and 100 degrees F)
- 1/2 cup unsalted butter
- 3/4 cup pastry flour
- 2/3 cup flour (all-purpose)
- 1 Tbsp. granulated sugar (plus more for sprinkling)
- 1/2 tsp. Maldon sea salt
- 5 eggs
- 1 vanilla bean (or 1 teaspoon vanilla extract)
- 3 Tbsp. pearl sugar (I used raw sugar, since pearl sugar is hard/was impossible to find, but I recommend prepping well in advance and making sure you have the real stuff — you can order it online. I just don’t think the raw sugar measured up.)
