- 5 oz. eggplant (diced)
- 1.5 oz. onion (chopped)
- 2.5 oz. tomato (chopped)
- 1/2 garlic clove (minced)
- 2 oz. capers (count as condiment)
- 1 oz. black olives
- 1 1/2 tsp. olive oil
- salt
- black pepper
- 5 oz. lettuce leaves
- 4 oz. sardines (tinned)
- 1 tsp. chopped parsley

Directions
- Cook eggplant, onion, tomato and garlic, salt and pepper over medium heat in a 1/4 cup of water until eggplant is cooked. Remove from stove top, let it cool slightly and add capers, olives and olive oil and stir through.
- Place filling in cos lettuce leaves and top with sardines and chopped parsley. Add salt and pepper to taste, if needed. The capers, olives and sardines make a unique taste combination.
