  • 5 ounces eggplant (diced)
  • 1.5 ounces onion (chopped)
  • 2.5 ounces tomato (chopped)
  • 1/2 garlic clove (minced)
  • 2 ounces capers (count as condiment)
  • 1 ounce black olives
  • 1 1/2 teaspoons olive oil
  • salt
  • black pepper
  • 5 ounces lettuce leaves
  • 4 ounces sardines (tinned)
  • 1 teaspoon chopped parsley

    Directions

    1. Cook eggplant, onion, tomato and garlic, salt and pepper over medium heat in a 1/4 cup of water until eggplant is cooked. Remove from stove top, let it cool slightly and add capers, olives and olive oil and stir through.
    2. Place filling in cos lettuce leaves and top with sardines and chopped parsley. Add salt and pepper to taste, if needed. The capers, olives and sardines make a unique taste combination.
