  • 1 1/2 tablespoons butter
  • 1 onion (finely chopped)
  • 1 clove garlic (minced)
  • 1 iceberg lettuce (finely shredded)
  • 2 potatoes (peeled and diced)
  • 4 cups chicken stock
  • 1/2 cup fresh dill (finely chopped + extra, to serve)
  • 1 lemon (zested)
  • yogurt (to serve)
  • crusty bread (to serve)

    Directions

    1. Melt butter in a saucepan over medium heat and sweat onion and garlic for 2-3 mins, until softened. Add lettuce, potatoes and stock and bring to a boil. Reduce heat and simmer for 10-15 mins, until potato is tender. Using a hand blender, purée soup until smooth. Add dill and lemon zest. Season and serve with yogurt and crusty bread.
