Really easy and delicious. I used canned lentils with “soup greens” but I washed them before I used them to get rid of the intense celery flavor. I also added finely chopped dried tomatoes after the onions were lightly done. I think the recipe could work better with Arborio rice, I used basmati. Next time, I will add more veggies because I find it a little too plain. Once on the plate, I added lemon juice and chili flakes.
Would definitely make again but with some alterations :)

We loved it. I'm introducing meatless recipes into our dinner rotation. I added nutrional yeast and vegan butter. Before that it was too plain, but my additions made it delicious to us.

Absolutely perfect as written, however, I did add minced garlic to the onions when they finished caramelizing. I ate this as a main dish, but the family ate as a side and it was great.

I followed the receipt exactly and it was ok but could have used way less lentils and rice for a side dish. Ended up with a lot leftover
