  • 2 tablespoons butter
  • 2 onions (medium, peeled and finely chopped)
  • 2 cloves garlic (peeled and crushed)
  • 1 red chili (deseeded and cut into thin rings)
  • 1 tablespoon curry powder
  • 6 1/2 cups vegetable stock
  • 1 2/3 pounds potatoes (peeled and cut into sticks)
  • 10.5 ounces celery
  • 3 leaves
  • 2/3 cup red lentils
  • chilies (Whole, for garnish)

    Directions

    1. Melt the butter in a saucepan and sauté the onions, garlic and chili for 2 mins. Sprinkle with the curry powder and sauté for 1 min. Add the stock, potatoes and celery, bring to a boil, cover and simmer for 10 mins. Add the lentils and cook for 12 mins. Season to taste. Ladle into bowls and garnish with celery leaves and whole chilies.
