  • 1/3 cup red lentils
  • 2 kaffir lime leaves (optional)
  • 2 cloves garlic
  • 1 chilli (bird’s eye)
  • 1 lime (about 3 tbsp)
  • 1 tablespoon fish sauce
  • 2 cups water
  • 1/4 cup mint (roughly chopped)
  • 1/4 cup chopped coriander (roughly)
  • 1/4 cup basil (roughly chopped, I used Thai basil)
  • 3 tablespoons olive oil
  • 2 cups sliced mushrooms (thickly, I used white, cremini and shitake)
  • 1 shallot (medium, thinly sliced)
