Turned out tasty and fulfilling for my diabetic mom. She enjoyed it and asked to have on the regular plan. Didn't add sweet potato, used yellow lentils, which were soaked ahead in water for couple of hours, added 1 stalk of lemongrass, 2 bay leaves and 1 medium cinnamon stick to add more aromatics.
