I made some adjustments on the vegetables but what a great curry. I could eat this every day.
Also substituted the water with stock as per suggestion below. It turned out perfect!

Amazing recipe! I highly recommend this recipe as a deep flavourful curry! I added extra veggies and used vegetable stock instead of just water to up the flavor. I also added 2 roasted red peppers. These added a lot too. The spices are perfect in this recipe...I'll definitely make it a few more times, at least!
