- 2 Tbsp. olive oil (if avoiding oil, add more almond milk or vegetable broth)
- 4 Tbsp. unsweetened almond milk (or vegetable broth, for added moisture)
- 1 Tbsp. water (or avocado or olive oil)
- 1/2 cup shallot (chopped)
- 2 cups cremini (sliced, or button mushrooms)
- 2 Tbsp. coconut aminos
- pepper
- salt
- 2 Tbsp. chopped fresh thyme (or sub rosemary // use dried if fresh is unavailable)
- 2/3 cup green lentils (rinsed + drained, optional: soak overnight in cool water to improve digestibility)
- 3 cups vegetable broth (or store-bought)
- 1 Tbsp. tomato paste (optional)
- 2 Tbsp. mashed potatoes (recipe above // for thickness)
- chopped parsley (Fresh)

I really liked this and served it on a bed of farro with some avocado on the side I also stirred spinach into the farro

An instant favorite. I used a whole small can of tomato paste, what was a little too much. Was completely fine without any tomato paste. These are around 3 servings.

The Lentil Mushroom Stew was delicious for my first time. I used brown lentil instead of green and soy sauce instead of Coconut Amino Acid.

Delish!! I added tomato paste and a sprinkle of vegan onion gravy at the end just to thicken and add a bit of richness. This was a nice and simple recipe and I would certainly make again.
