- 1 cup green lentils (or dry brown)
- 1/2 sweet onion (medium, finely chopped)
- 3 cloves garlic (minced)
- 1/2 cup cilantro (finely chopped)
- 1/2 cup parsley (finely chopped)
- 1 tsp. cumin
- 3/4 tsp. coriander
- 1/4 tsp. cayenne pepper
- salt (/pepper, I used about 1 tsp.)
- 1 cup bread crumbs
- 1 Tbsp. olive oil
- 1 head red cabbage (thinly sliced)
- 1/2 cup yogurt (regular or use plain coconut yogurt for dairy-free. Can also try homemade cashew yogurt)
- 1 lemon (juiced)
- 1 tsp. cumin
- 1 clove garlic (grated, I do this on my microplane)
- 1/4 cup chopped parsley (finely)
