  • 1/2 cup red lentils (split skinned quick cooking kind, masoor dal)
  • 1 teaspoon olive oil
  • 4 ounces mushroom (chopped small)
  • 1/2 small onion (chopped small)
  • 4 cloves garlic (finely chopped)
  • 1/4 cup shredded carrots
  • 3/4 teaspoon dried oregano (or use 1/2 tbsp fresh)
  • 1 teaspoon dried basil (or use 2 tbsp fresh)
  • 1/4 teaspoon thyme (or rubbed sage)
  • 1/4 teaspoon onion powder
  • 2 teaspoons nutritional yeast (optional)
  • 18 ounces marinara sauce
  • 28 ounces diced tomatoes
  • 1 tablespoon tomato paste (optional)
  • 1/2 teaspoon salt (depends on the salt content of the sauce. Use less and add more later to taste)
  • 1 dash black pepper (and red pepper flakes)
  • 1/4 cup red wine (or use veggie broth)
  • fresh basil (or thyme for garnish)

    Delicious. Didn’t follow recipe precisely, but appreciated the technique/proportions. I think it’s quite flexible and could be adapted to whatever veg you have on hand — eg I used mushrooms and squash.
