- 1 green pepper (small, chopped)
- 1 bay leaf
- 4 Tbsp. olive oil
- 1 onion (medium, finely chopped)
- 1 clove garlic (minced)
- 2 carrots (peeled and chopped into bite size pieces)
- 1 potato (medium, peeled and chopped into bite size pieces)
- 1 pinch sea salt
- 1/2 tsp. dried thyme
- 1/2 tsp. paprika
- 1/4 tsp. smoked paprika
- 1/2 tsp. black pepper
- 50 mL white wine (vegan, or 50 ml water)
