- 1 1/2 cups semi pearled farro
- salt
- pepper
- 1 Tbsp. unsalted butter
- 1 red onion (small, chopped)
- 1 Tbsp. garlic paste (or minced garlic)
- 1/2 tsp. pepper flakes (coarse Aleppo)
- 2 bunches asparagus stalks (thin, tough bottoms discarded, 1-inch tips cut off and the rest cut into 1/4-inch coins)
- 1 lemon
- 4 Tbsp. lemon juice (freshly squeezed, plus more to taste)
- 2 Tbsp. lemon vinegar (Sicilian)
- 1/2 cup pistachios (finely chopped, mine were roasted and salted)
- 4 oz. feta cheese (crumbled or cut into small cubes)
- 1/3 cup fresh tarragon (chopped)
