- 1 tiger shrimp (½lb large wild, peeled and de-veined, any wild shrimp will work)
- 1 Tbsp. kosher salt (if using table salt, use ½ tbsp)
- 1 Tbsp. sugar
- 2 cloves garlic (minced)
- 1 tsp. cayenne pepper
- 1/2 tsp. black pepper (freshly ground)
- 1 tsp. smoked paprika
- 2 Tbsp. olive oil
- 3/4 cup buttermilk
- 1 lemon
- 8 oz. all purpose flour
- 2 oz. panko breadcrumbs
- 1/2 tsp. cayenne pepper
- 2 Tbsp. seasoned salt
- 1 tsp. white pepper
- 1 tsp. granulated garlic
- 1 tsp. granulated onion
- 2 tsp. cilantro (dried, parsley or basil will also work)
- 1/4 cup buttermilk (for dredging)
- oil (for frying, I used peanut, but canola or vegetable will work fine)
