Hot! Hot! Hot! Summer days can be hot! Your kids are looking for a fun treat to cool them down. Well we have just the recipe for you! Try our Lemon and Cucumber Popsicles. This recipe is pretty simple to prepare and great for the kids. They will love a cooling snack on a hot summer day. - 1 1/2 cups water
- 1 lemon
- 1/3 cup lemon juice
- sweetener
- 1/2 cup cucumber

Directions
- Combine the water, lemon rind, and lemon juice. Sweeten to taste. Pour into popsicle molds and place in the freezer for 1 hour.
- Remove from the freezer, stir with a spoon, add a portion of the cucumber to each popsicle, and place in the freezer for 45 minutes.
- Remove from the freezer and stir with a spoon to mix the cucumber evenly. Place in the freezer once more until firm.
