Perfect for using up that left over ricotta from making lasagna!
Great fluffiness nice texture the only change I made was adding lemon extract instead of lemon juice ( less is more with extract!) …made in cast iron skillet and topped it off with bourbon barrel aged maple syrup ( Wild four if you can find)

Scrumptious and forgiving recipe. Perfect as written, so moist and fluffy - no use for plain pancakes around here anymore. I have had to omit the zest, sub 1:1 ACV for lemon juice and/or 1:3 soda for powder, and use full-fat Greek yogurt in place of ricotta, and they still tasted great each time.

So good! Very moist and fluffy. Level of lemony goodness was perfect. Definitely worth the extra effort to make these versus using basic pancake batter.

They were delicious! Light and lemony. I added dried lavender to some of them which made them more fragrant and delicious.

Super tasty! Delicate and moist and fluffy. I did less than 1 tbsp lemon zest and it was still wonderfully lightly lemony.

Very tasty! Next time I'll use less lemon zest and blend the ricotta in last so it'll be more lumpy.

These pancakes were great! Each pancake was hot, fluffy and flavorful. I could get by without the lemon zest and have a more subtle lemon flavor. Next time, I might make them in the waffle iron ☺️

Absolutely delicious! They turned out light and fluffy with a great balance of lemon flavor. I added sautéed apples and was also a nice compliment to this recipe.

I've been using this recipe now for a little over a year and i LOVE the texture. This has been my go to family approved weekly Sunday brunch pancakes. I follow it to a T

I followed the directions to the letter, with the exception of making a mistake and mixing all of my ingredients together at once. It did not impact the flavor or consistency of the pancakes. They were wonderful! Will definitely be adding this recipe to my weekend breakfast rotation.
