- 1/4 tsp. baking soda
- 4 eggs
- 1/3 cup oil (your choice; I use coconut oil – melt it and add to the batter)
- 1/2 cup honey (or other sweetener)
- 1 Tbsp. vanilla
- 1 Tbsp. poppy seeds
- 1 Tbsp. lemon zest (about one medium-size organic lemon, finely ground zest – I use the fine portion of a box grater)
