- 3/4 tsp. lemon zest (finely grated)
- 3 Tbsp. sugar
- 1 large egg
- 2 Tbsp. unsalted butter (cut into small pieces)
- 165 grams almond flour
- 165 grams confectioner's sugar
- 1 pinch fine sea salt
- 5 grams powdered egg white (optional, I don't use them)
- 150 grams granulated sugar
- 115 grams egg whites (aged, from 4 eggs **)
- 1/2 tsp. cream of tartar
- 1 grated lemon zest (packed teaspoon finely, or 1/4 teaspoon lemon oil)
- 6 drops food colouring (yellow liquid, optional)
- 2 Tbsp. poppy seeds (if desired, optional)
