- 1/2 cup coconut milk (warm)
- 3 1/2 cups all-purpose flour (divided into 2 1/2 cups and 1 cup)
- 1/4 cup sugar
- 1/4 tsp. salt
- 1 Tbsp. ground cardamom
- 1 egg
- 3 Tbsp. unsalted butter (melted and cooled)
- 1 egg (whisked together for an egg wash)
- 1/4 cup lemon curd (I used this recipe, but you can always use store-bought)
- 1 cup coconut flakes (unsweetened)
- 1/2 cup sugar
- 3/4 cup crystallized ginger
- 1/2 stick unsalted butter (softened)
