- 1 cup almond meal
- 1/2 cup gluten-free flour
- 1/4 cup poppy seeds
- 1 lemon (finely zested)
- 5 egg whites (lightly beaten)
- 180 grams unsalted butter (melted)
- 2 Tbsp. lemon juice

Directions
- Preheat oven to 200 C. Lightly grease 12 friand moulds (muffin tins or patty cases can be used instead).
- Place dry ingredients in a large mixing bowl and stir to combine.
- Add beaten egg whites, butter and lemon juice and stir again until the mixture is smooth.
- Spoon evenly into moulds and bake in oven for about 20 minutes, or until the tops have started to crack and the edges are golden brown.
- Remove from oven, allow to rest for 5 minutes before turning out onto a wire rack to cool completely.
