  • 2 cups sweetener (granulated, coconut palm sugar, maple sugar or erythitol)
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup lemon curd
  • 1 teaspoon grated lemon rind (finely)
  • 1/2 cup milk (almond at room temp)
  • 1/2 cup coconut oil (melted)
  • 2 eggs (room temp)
  • 2 teaspoons bourbon vanilla extract
  • 1/2 cup boiling water
  • 1 pound grass-fed butter (softened to room temperature, unsalted)
  • 1 cup Dutch process cocoa powder
  • 1 cup confectioner's sugar (I make my own maple version by passing my maple sugar through the blender until powdered. Or you can use whichever variation of powdered sweetener you prefer like cane sugar or erythitol)
  • 1 teaspoon vanilla extract
  • 1 pinch fine ground sea salt
