- 2 cups sweetener (granulated, coconut palm sugar, maple sugar or erythitol)
- 2 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1/2 cup lemon curd
- 1 tsp. grated lemon rind (finely)
- 1/2 cup milk (almond at room temp)
- 1/2 cup coconut oil (melted)
- 2 eggs (room temp)
- 2 tsp. bourbon vanilla extract
- 1/2 cup boiling water
- 1 lb. grass-fed butter (softened to room temperature, unsalted)
- 1 cup Dutch process cocoa powder
- 1 cup confectioner's sugar (I make my own maple version by passing my maple sugar through the blender until powdered. Or you can use whichever variation of powdered sweetener you prefer like cane sugar or erythitol)
- 1 tsp. vanilla extract
- 1 pinch fine ground sea salt
