This simple and easy recipe for lemon curd will help you use up your lemons. Made with just 4 ingredients, this lemon curd is ready in just over a half an hour. Presented in a jar with a ribbon tied around it, lemon curd makes a great homemade gift for friends, but make sure to keep some for yourself because it is absolutely delicious! Spread it on your toast, muffin, or favorite baked good.
Ingredients
- 6 lemon
- 200 grams cane sugar
- 6 eggs
- 2 Tbsp. corn starch (level tbsps.)
Directions
- In a heavy-bottomed pot on low heat, add the lemon juice and sugar and stir until dissolved.
- In a separate bowl, beat the eggs well.
- Dilute the cornstarch in a splash of cold water and then beat it into the eggs.
