- 20 mL lemon juice (freshly squeezed)
- 1 egg
- 1/2 tsp. lime zest (grated, plus extra for decorating)
- 1/4 tsp. juice (squeezed from freshly grated ginger, you can increase this to 1/2 or even 1 teaspoon, adjust to taste)
- 200 mL whipping cream
- 1/2 Tbsp. caster sugar (adjust to taste)
- 1 drop green food colouring (liquid, you want a very pale jade cream)
