Great! Used large kale bunch from harris teeter (didn’t use the whole thing because it was huge). Used Israeli couscous from Harris teeter. Took less than 5 min to toast. Took over 10 min to fully steam off liquid. Mixed all spices together included lemon juice and didn’t quite add them all. Used two sweet potatoes and it was a perfect amount, one was large and one was small. Sweet potatoes took like 30 minutes to cook, they cooked the whole time the couscous was cooking.

We loved this. Easy to make and tasted wonderful. I used baby spinach instead of kale, and curry powder instead of cumin. I took it to work to warm up at lunchtime, and everyone said how amazing it smelled. I was so proud!!!!

I had to sub the veggies with broccoli and butternut squash but it was still good. I bet it would've been better with sweet potatoes and kale.

New favorite!! Simple, easy, few ingredients, healthy and very satisfying. Making for the second time already.
