Description
Lemon cookies are a staple of English tea time. However, you can bring all the sophistication of a high tea to your table with these lightly sweetened lemon cookies. Made with fresh lemon juice and zest, each bite of these lemon cookies have a burst of refreshing citrus flavor. These cookies make a great addition to a glass of iced tea on a warm summer afternoon. - 170 grams sugar
- 270 grams flour
- 1/2 tsp. salt
- 2 lemons
- 2 Tbsp. fresh lemon juice

Directions
- In a food processor, pulse together the butter, sugar, flour, salt, and lemon zest.
- When it starts to form a ball, stop.
- Add the lemon juice and pulse another 2 to 3 times.
