- soup (Lemon Chicken Pasta)
- 5 lb. chicken
- 2 carrots (peeled, sliced into thick pieces, 1-2 inches is fine)
- 2 celery stalks (sliced into thick, 1-inch pieces)
- 1 onion (medium, peeled and sliced)
- 4 garlic cloves (crushed)
- 2 bay leaves
- 1 handful chopped parsley
- 7 cups water
- 2 tsp. salt
- 10 oz. pasta (uncooked, I used egg noodles in the photo above, but have also used ditalini and orzo)
- 1 1/2 cups carrots (cup chopped)
- 1 cup chopped celery
- 1 cup finely chopped onion
- 1 1/2 tsp. grated lemon rind
- 1/4 cup fresh lemon juice
- 1 handful finely chopped fresh parsley (optional)
