    Excellent butter cream! I did a half batch and it turned out just perfectly! I used this recipe because I just happened to have about an inch of lemon curd left in a jar (bought at the grocery store in the Brit section!!) which was about a half cup! I never would have thought to use it!

    Light lemony & creamy ... yet not overly sweet frosting. Complimented the Lemon Cupcakes filled with lemon curd that I made. The color of the frosting is also worth mentioning ... it was beautifully elegant with the softest yellow. It would be beautiful for a spring wedding or baby shower.
