- 3 cups rotini (uncooked white fiber, or whole wheat rotini, used regular)
- 2 tsp. olive oil
- 1 lb. boneless, skinless chicken breasts (cut into 3/4-inch strips)
- 1 1/2 cups fresh mushrooms (sliced, omitted)
- 1 1/2 cups shredded carrots
- 4 garlic cloves (thinly sliced, used jarred minced, about 2t)
- 1 cup reduced sodium chicken broth
- 3 oz. cream cheese (reduced-fat, used full fat)
- 1 Tbsp. lemon juice
- 1 1/2 cups frozen peas (about 6 ounces -- thawed, used Steam in bag peas, added to my plate)
- 1/3 cup shredded Parmesan cheese
- 1/4 cup fresh basil (minced, used 1T dried)
- 2 tsp. grated lemon peel
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. crushed red pepper flakes (my plate only)
