- 1/4 cup light brown sugar (packed)
- 2 Tbsp. white granulated sugar
- 1 pinch salt
- 1 pinch nutmeg
- 1/2 tsp. vanilla extract (I used Ballard Extracts Vanilla Extract)
- 1 1/4 cups wafer crumbs (Nilla)
- 1 cup all purpose flour
- 2/3 cup lemon juice (freshly squeezed, approximately 3 large lemons)
- 1 Tbsp. lemon zest
- 2/3 cup flour (all-purpose)
- 4 eggs (beaten, at room temperature)
- 1 1/4 cups white granulated sugar
- 1/2 tsp. lemon extract (I used Ballard Extracts Lemon Extract)
- powdered sugar (for dusting the top, use as much or as little as you like)
