- 2 Tbsp. lemon zest
- 1 pinch fine-grain salt
- 2 egg whites (at room temperature)
- 1 tsp. lemon extract (optional but gives so much flavor)
- 4 Tbsp. powdered sugar (use this recipe to make powdered coconut sugar)

These were really good but I did have to add a 1/2 teaspoon of baking soda (they needed to rise more). I added the juice from 1/2 lemon rather than lemon extract. Everyone loved them, chewy and soft yet crunchy!
