- 6 lb. leg of lamb (trimmed of excess fat., Mine was boned, so it weighed 4.25 pounds)
- 3 Tbsp. kosher salt
- 3 sprigs rosemary (finely chopped, about 3 tablespoons)
- 2 tsp. black pepper
- 4 cloves garlic (peeled, and sliced into thin slivers)
- 1/4 cup water
- 2 Tbsp. sugar
- 1/4 cup fresh mint leaves (or so finely chopped)
- 1/2 cup wine vinegar (won't give the same flavor)
- 1 pinch kosher salt
