Description

A great way to use leftovers is to make them into croquettes. In this recipe, you can use any leftover meat you have in the refrigerator as the base for these crisp little bites. You make a simple bechamel sauce, add the meat and then let it chill in the refrigerator before breading and frying it. If you want to add some extra flavor, add some fresh spices that will complement your choice of meat to the mixture.

  • 750 milliliters milk

    Directions

    1. Melt the butter in a saucepan on medium heat. Add the flour and stir well.
    2. Add the milk slowly and simmer on low heat until thickened. Add a pinch each of nutmeg, salt, and black pepper.
    3. Dice the cooked meat and add to the sauce. Mix well.
    4. Cover the mixture and chill overnight.
    5. Remove the mixture from the refrigerator, form a croquette, coat in egg and breadcrumbs, and deep fry in vegetable oil.
