- 1/2 green pepper (chopped, or more)
- 1 Tbsp. olive oil
- 10 oz. roast beef (leftover, or steak, about 1 1/2 cups diced beef cubes)
- 2 cups beef stock (or 1 can beef broth plus a little water)
- 1 cup roasted tomatoes (slow, or 1 can diced tomatoes)
- 1/2 Tbsp. dried oregano
- 1/2 Tbsp. dried basil
- 1 cup mushrooms (cut in large chunks)
- 3 Tbsp. fresh basil (chopped, or frozen chopped basil.)

I am so glad I happened upon this; you can do so many variations! I pretty much followed this recipe, and I love it! No fresh basil, but I got turned on to your "freezing fresh basil" page, which I will be doing in the future! I will be making this with some different touches again for sure!

Had more meat, mushrooms so I added 2 more cups of beef broth and an additional can of diced tomatoes and Tbsp of garlic granular and fresh pepper. Also, had some leftover fresh broccoli & carrot mix so microwaved them and added. After simmering, added 1/2 tsp crushed red pepper and tsp of Mrs Dash steak seasoning
2nd time: used leftover vegetables, celery & carrots. Used 2 cans of diced tomatoes, 2 tsp granular garlic, 2 tsp green chilis, 1 Tbsp of Mrs Dash steak, 1/2 tsp crushed red pepper and 4 cups total of liquid. Leftover beef gravy and rest of beef broth. 1/2 hour before dinner added cooked mini elbow macaroni and added.
11/16/2020: green pepper, onion, celery, carrots, summer squash, pork stew, chunks of Italian sausage, minced garlic, yellow cap Mrs Dash, oregano. 1 can diced tomatoes, 1 can Rotel diced tomatoes with chilies. Beef broth and left over beef gravy. Some( a few shakes) Worcester sauce. 1 cup onzo pasta 1/2 hour before serving.
10/6/21: used 2 cans diced tomatoes, 1 can Rotel diced with chilies. Basil, oregano, Italian seasoning, crushed red pepper. Peppers, onions, mushrooms, summer squash, green beans. Leftover roast. Beef stock.

more like a soup than a stew, but delicious none the less! I used what I had on hand ... consumee instead of stock, a whole (medium) onion, a whole sweet pepper. I didn't have any fresh basil. Well worth making and a great use for leftover roast beef.
