Ingredients

2 SERVINGS
- 2 Tbsp. coriander seeds
- 5 whole star anise
- 3 cinnamon sticks
- 1 chunk ginger (peeled and smashed with side of knife)
- 1 qt. homemade turkey stock (or homemade or store-bought chicken stock)
- 2 cups daikon radish (sliced, optional but very cleansing, especially after a heavy meal, like Thanksgiving dinner)
- 1 bunch green onions (slice the green parts and cook them in the soup; mince the white parts and use them as a garnish, optional)
- 1 tsp. brown sugar (or more to taste)
- 1 Tbsp. fish sauce (or more to taste)
- 2 cups dark leafy greens (shredded, I used purple pak choi from my garden, but kale works well, too)
- 1/2 lb. turkey breast (leftover, cut into chunks or shredded)
- 2 oz. dried rice noodles (flat, or use 1 bunch of cellophane/bean thread noodles)
- 2 Tbsp. cilantro (chopped- for garnish, optional)
- 1/2 lime (cut into wedges)
- Sriracha chili sauce (to taste)
