- 3 inches fresh ginger (knob of, peeled and sliced into 1/4-inch slices)
- 4 Tbsp. white miso paste (or red, the amount depends on the brand of miso you have - see notes)
- 1 cup coconut milk
- 1 tsp. sugar
- salt (to taste)
- 1 lb. angel hair pasta (/ spaghetti / fettucini / udon/ ramen works just great cooked according to instruction)
- 4 cups turkey (leftover, I prefer dark meat, but use what you like shredded)
- 3 boiled eggs (spiced, halved- see notes)
- pickled ginger (Japanese)
- 2 stalks green onions (thinly sliced)
- 8 oz. snap peas
- 2 cloves garlic (finely chopped)
- 1 Tbsp. oyster sauce
- 1 Tbsp. cooking oil
