Oh my. I needed to make changes because of what I had in the cupboard. For 2 servings I used 8 oz. of lamb steak that I cut into 1" pieces and browned in 1 T Smart Balance and 1 T olive oil in a large saucepan. I removed it from the pan and set it aside. I used 1 cup of unsweetened, home canned applesauce, the chopped onion, garden garlic and celery in the food processor, added it to the saucepan with unsalted chicken stock and simmered it for a few minutes. I added garden thyme and the curry powder and let that go for a few minutes. It needed more spice so 1/4 t cayenne and 1 t garam masala, white pepper and 1/2 t salt. I returned the lamb with the bones to the sauce and let it simmer with the top off for 2 hours with a diffuser under the saucepan. Basmati rice went under the curry in bowls and the two of us ate the whole thing!
