I doubled the carrots and took out the beans (as my family doesn’t eat legumes) and it was perfect! So flavorful and easy!

very good, hearty, added celery, and substituted hominy for the beans. Good soup! will make again.

I love this recipe. I leave out the beans and add extra corn in its place. At the end, I add a 1/2 cup of heavy cream for more flavor.
