- 1 cup brown rice (leftover)
- 3/4 cup carrots (chopped)
- 1/4 cup chopped celery
- 1/8 cup red pepper (chopped)
- 1/4 chopped onion
- 1 clove garlic (chopped)
- 1 Tbsp. reduced sodium soy sauce
- 2 Tbsp. olive oil

Directions
- Heat pan and add olive oil.
- Add leftover rice, spread into thin layer and fry without stirring 7-10 minutes.
- Stir rice and put a hole in the middle of the rice. Add the vegetables into the hole and cook 3-5 minutes, stirring vegetables occasionally.
- Stir together rice and vegetables. Add soy sauce, stir and serve.
