  • 2 tablespoons vegetable oil
  • 2 leeks (pale section only, thinly sliced)
  • 4 slices bacon (finely chopped)
  • 2 cloves garlic (crushed)
  • 13 ounces broccoli (cut into florets)
  • 4 eggs
  • 1 cup milk
  • 1 cup cheddar cheese (grated)

    Directions

    1. Preheat the oven to 350°F. Lightly grease a 9-inch deep dish pie plate.
    2. Heat the oil in a medium skillet on medium heat. Add the leek, bacon and garlic and cook, stirring for 4-5 mins or until the leek has softened.
    3. Bring a medium saucepan of water to a boil on medium heat. Add the broccoli and cook for 2 mins. Drain and place in the prepared dish. Top with the leek mixture. Whisk the eggs, milk and cheese in a large bowl. Season with freshly ground black pepper. Pour the egg mixture over broccoli.
    4. Bake for 15 mins. Reduce the oven temperature to 325°F. Bake for 15 mins more or until set. Cool on a wire rack for 5 mins. Cut into wedges.
