Description

A hearty, flavourful, slow-cooked spin on the classic leek and potato soup! Super easy and makes plenty of servings. Mini potatoes may be substituted for larger chopped potatoes upon preference; or peel, boil and chop potatoes before adding to crockpot for a creamier stew. Any favourite vegetables can be added with good results!

  • 2 leeks (chopped)
  • 1 onion (diced)
  • 4 garlic cloves (finely chopped)
  • 1 1/2 pounds potatoes (new/mini, halved)
  • 15 ounces steak (thinly sliced)
  • 2 tablespoons beef stock
  • 2 teaspoons rosemary
  • 2 tablespoons coriander
  • 12 mushroom (sliced, optional)
  • 2 cans corn (optional)

    Directions

    1. chop up all ingredients
    2. throw it in the crockpot; mix together with seasoning and add approx 3.5 cups water
    3. cook on low for minimum 12 hours.; add water and stir if needed after 10 hours.
    4. Enjoy!
