- 125 grams rasher bacon (chopped)
- 12 chicken thighs (skin on, trimmed of excess skin and fat)
- 1 dried chilli (large flavourful, such as guajillo or pasilla, split, seeds removed)
- 2 1/3 cups sliced carrots (peeled and, 1/2-cm thick rounds, about 625g bunch weighed with tops)
- 2 cups yellow peppers (diced, about 2 peppers)
- 2 cups yellow onions (diced, about 2 medium onions)
- 3 cloves garlic (unpeeled)
- 850 grams tomatoes with juice (crushed)
- 2 Tbsp. fresh ginger (grated)
- 4 cups cooked white rice
- 2/3 cup slivered almonds (toasted, chopped)
- 1/2 cup fresh flat leaf parsley (chopped)
